Description

  • 1 cup shredded coconut (desiccated or fresh)
  • ½ cup honey
  • ¼ cup unsalted butter, melted
  • ⅓ cup white sugar
  • Optional: pinch of salt

Instructions

  1. Preheat your oven to 160°C (320°F) and line a muffin tin with paper cases.
  2. In a mixing bowl, combine the shredded coconut and sugar.
  3. In a small saucepan or microwave-safe bowl, gently warm the honey and butter until melted and combined.
  4. Pour the honey-butter mixture over the coconut and sugar. Stir well to coat evenly.
  5. Spoon the mixture into the paper cases, filling each about three-quarters full.
  6. Bake for 12–15 minutes or until golden brown and caramelized.
  7. Remove from the oven and allow to cool completely before serving.
