- 2 cups Millville Protein Pancake Mix
- 3/4 cup milk (dairy or non-dairy)
- 2 eggs
- 3 tbsp maple syrup
- 2/3 cup plain Greek yogurt
- 1 cup mix-ins (berries, bananas, chocolate chips, or sausage)
Instructions
- Preheat oven to 350°F (175°C). Grease a 12-cup muffin pan.
- In a large bowl, add pancake mix. Make a well in the center and add milk, eggs, maple syrup, and Greek yogurt.
- Whisk wet ingredients, then gently incorporate the pancake mix.
- Fold in your favorite mix-ins.
- Divide batter evenly among muffin cups.
- Bake for 25–30 minutes, or until a toothpick comes out clean.
- Cool slightly before serving.
