Ingredients

Scale

For the Crust

  • 1½ cups (150g) graham cracker crumbs (or chocolate sandwich cookie crumbs)
  • 6 tablespoons (85g) unsalted butter, melted
  • 2 tablespoons granulated sugar (optional, depending on your cookie choice)

For the Filling

  • 2 cups (480ml) heavy cream
  • 8 ounces (225g) cream cheese, softened
  • 1 (14 ounce/400g) can sweetened condensed milk
  • 1 teaspoon pure vanilla extract
  • 1½ teaspoons peppermint extract (adjust to taste
  • Green food coloring (as desired, for that classic Shamrock Shake look)
  • ½ cup mini chocolate chips or chopped chocolate (optional)

For the Topping

  • 1 cup (240ml) whipped cream (homemade or store-bought)
  • Green sprinkles or festive decorations
  • Optional: chocolate syrup or mint leaves for garnish

Instructions

Step 1: Prepare the Crust

  1. Mix the Crumbs: In a medium bowl, combine the graham cracker (or cookie) crumbs with the melted butter and sugar (if using). Stir until the mixture is evenly moistened.
  2. Press into Pan: Transfer the mixture to a 9-inch pie dish. Use the back of a spoon or your fingers to press the crumbs firmly into the bottom and up the sides, forming an even crust.
  3. Chill: Place the crust in the refrigerator while you prepare the filling. This helps it set and makes it easier to slice later.

Step 2: Make the Filling

  1. Whip the Cream: In a large bowl, whip the heavy cream until stiff peaks form. Set aside.
  2. Beat the Cream Cheese: In another large bowl, beat the softened cream cheese until it’s smooth and free of lumps.
  3. Add Condensed Milk: Gradually add the sweetened condensed milk to the cream cheese, mixing until well combined.
  4. Add Flavorings: Stir in the vanilla extract, peppermint extract, and a few drops of green food coloring. Mix until the color is even and the filling is smooth.
  5. Fold in Whipped Cream: Gently fold the whipped cream into the cream cheese mixture until no streaks remain. If using, fold in the mini chocolate chips.
  6. Pour into Crust: Spoon the filling into the chilled crust, smoothing the top with a spatula.

Step 3: Chill and Decorate

  1. Refrigerate: Cover the pie with plastic wrap and refrigerate for at least 4 hours, or overnight, until set.
  2. Add Toppings: Before serving, top with whipped cream, sprinkles, and any additional garnishes.

Notes

  • Crust Options: Use graham crackers, chocolate cookies, or even a gluten-free alternative for dietary needs.
  • Mint Flavor: Adjust the peppermint extract to your taste. Start with 1 teaspoon and add more if desired.
  • Color: Add green food coloring a few drops at a time until you reach your desired shade.
  • Make-Ahead: This pie can be made a day in advance for easy entertaining.
  • Storage: Keep refrigerated. Best enjoyed within 3 days.
